Our goal is to create a new standard of excellence for meat supply in the Turks and Caicos Islands.

As longtime residents of Provo, we know all too well the challenges of finding tasty, quality, affordable meat.

We felt it was about time there was somewhere you could go to grab a great cut of steak, homemade sausage links or a beautiful rack of lamb and feel confident that you’re taking home happy, healthy meat.

Jeff Austin, Head Butcher

Jeff Austin began his career as a butcher in Charlotte, NC, where he majored in culinary arts and food service management at Johnson and Wales University.

He first worked as a professional Butcher at the prestigious “Reid’s Fine Foods” at their uptown location in Charlotte, NC.

In 2010, Jeff moved to Provo to work at Graceway Supermarkets where he has serviced the grocery needs of Turks and Caicos Islanders for over 13 years.

Along with being a huge food lover, Jeff is also an avid sports fan (GO COLTS!!), and home gardener.

During his free time, he enjoys outdoor adventures, lazy beach days, and cooking meals for his family and close friends.

James Van Dyke, Owner and Managing Partner

Chef James fell in love with the kitchen at age 13, where he got his start as a dishwasher at a favorite local spot north of Seattle. He honed his skills working in the kitchen throughout high school and later went on to earn his chef’s hat at Le Cordon Bleu culinary school.

James worked his way up the ranks from Portland to work in Chicago Michelin Star restaurants, to The Bahamas, and finally landed in Turks and Caicos in 2017.

In Provo, Turks and Caicos, he met his wife Delphine and together they dreamed up Island Prime Butcher and their restaurant Embers.

With over 25 years in the hospitality industry and 15 years in the Caribbean’s finest resorts and restaurants, James’ passion for amazing product led to the idea of creating a truly Local Butcher Shop.

Enter Island Prime Butcher, a traditional local food provider founded on a farm-to-fork approach using pasture-raised, non-GMO, and sustainable animals for the discerning customer.
